Healthy & Delicious Memorial Day Recipes You Must Try

Certain holidays represent a fantastic opportunity to get together with family and friends and enjoy some tasty treats. Memorial Day recipes are precisely that type of delicious plate. That said, just because they taste great, it doesn’t mean that they have to be unhealthy.

When you know what you’re doing, you can make some amazing dishes that people will talk about for years to come. While it would be fantastic if we were all skilled enough chefs to come up with these meals on our own, the majority of us can use a hand with some delicious and healthy Memorial Day recipes.

The following Memorial Day recipes can give you some fantastic options to serve and may also inspire you to come up with some of your own fantastic dishes, too.

Hummus with sundried tomatoes – to make this dip, you’ll want one can of rinsed and drained chickpeas, a clove of garlic, ¼ cup of sundried tomatoes in olive oil, ¼ cup of tahini paste, two lemons’ worth of juice, 1 tablespoon of tomato paste, a dash of smoked paprika and a very light sprinkle of sea salt. Blitz all these ingredients in a food processor or blender, until very smooth and well combined. Tip: serve with crispy sprouted grain chips.

Grilled chicken and veggie kebabs – this light, nutritious and hugely flavorful dish needs: 1 pound of organic chicken breast (cut into 1 inch cubes), 3 bell peppers (preferably in different colors, cut into 1 inch pieces), ¼ cup lemon juice, 2 tablespoons of olive oil, pinch of black pepper, garlic salt and smoked paprika. Toss the veggies and chicken in olive oil and sprinkle with the seasonings. Skewer each piece in alternating types and colors. Cook for about 3-4 minutes on the grill for each side or until the chicken is white throughout. Watch it carefully to prevent burning.

Baked apples stuffed with walnuts and dates – The perfect sweet, tasty and healthy dessert. Here’s what you’ll need: 9 cored apples, a squeeze of lemon juice (just to keep the apples from turning brown), 1 tablespoon of unrefined coconut oil, ½ cup almond flour/meal, ¼ cup chopped toasted walnuts, 4 dried pitted and chopped dates, pinch ground cinnamon and ginger, ¼ cup unsweetened light coconut milk. Melt coconut oil in a pan and stir in the walnuts, dates, cinnamon, ginger, coconut milk and almond meal. Warm for a few minutes then carefully fill the empty cored apples with the mixture. Place the apples in a pan and cover loosely with foil. Bake for about 45 minute at 350 degrees or place on the grill and bake them there until the apples are soft and split.
