Your first meal of the day can set the tone for the way the rest of the morning will play out. That said, when you’re trying not to go to the supermarket, it’s sold out of your favorite ingredients when you do go, and online ordering has a wait time of at least a week – if you’re lucky – that bowl of Greek yogurt and fresh berries may not be possible every morning.
No problem! Here is an affordable, simple option to make with what’s in your pantry, while you wait for your next grocery delivery to arrive.
Stay-At-Home Overnight Oats
- ½ cup rolled oats
- ½ cup milk (or almond, cashew, oat, soy, or coconut milk)
- 2 tbsp nut butter (peanut butter or otherwise, crunchy or smooth)
- 1 tbsp honey or maple syrup
Prepare the night before. In a jar with a lid (a mason jar will do as will a covered bowl) combine the last three ingredients. Mix the nut butter as much as you can, but it doesn’t have to be perfect. Add the oats and stir until everything is combined and the oats are fully immersed in the milk.
Add the lid and put it in the fridge overnight. In the morning, your breakfast is already made for you.
Great toppings to add in the morning, if you have them, are:
- Raisins or dried cranberries
- Pumpkin or sunflower seeds
- Almond slivers or walnut halves
- Unsweetened shredded coconut
- Dark chocolate chips
- Thin apple slices
- Frozen berries (thawed)
