If you’re planning a Halloween party, you’ll be in charge of figuring out what foods and snacks you’ll serve throughout your event, and if you want to keep your menu healthy, you might be having trouble locating healthy Halloween recipes that all of your guests will love. Well, have no fear, as the following recipes are a great place to start if you’re hoping to plan a spooktacular party your guests won’t forget.
Peanut Butter Caramel Corn
For many people, caramel corn invokes all of the best aspects of the season. This quick recipe is one of the many easy healthy Halloween recipes that you can easily make at home, and you can leave out a large bowl of this delicious popcorn for all of your guests to enjoy.
Start by preheating your oven to 250°F. Heat up about 2 tablespoons of vegetable oil over medium-high heat in a Dutch oven. Once the oil is heated, add ½ cup of corn kernels, cover them, and cook for about 4 minutes, but shake the pan often. You’ll start hearing the kernels pop, and once the popping slows down, remove he pan from the heat and let it stand as the final kernels pop. Uncover the popcorn and add ½ cup of sliced almonds.
In a saucepan, combine 2/3 cup each of brown sugar and light corn syrup, along with 2.5 tablespoons of butter (you can use plant-based butter if you wish), and ½ teaspoon of salt. Boil it for 2 minutes, stirring occasionally. Remove this from the heat and add ½ cup of creamy peanut butter and 1 teaspoon of vanilla extract and stir it into the mix before drizzling over your popcorn. Spread the popcorn onto a baking sheet and bake it for 1 hour, but stir every 15 minutes. Cool before enjoying.
Candied Apples
No Halloween party would be complete without candied apples, so start by lining a baking sheet with foil and coating it with cooking spray. Insert a 6-inch dowel into the end of each apple (this recipe makes 8 candied apples).
Combine a cup of sugar with 1/3 cup light corn syrup and 1/3 cup of water in a saucepan. Cook over medium heat until everything dissolves. Stir occasionally, and remove from heat when the mix is 300°F.
Hold each apple by the dowel and dip it into your syrup, turning the apple to distribute it evenly before placing it on your baking sheet. Once hardened, you can enjoy.
With these healthy Halloween recipes, you can rest assured your guests will satisfy their sweet tooth without undoing their diet.
